Neapolitian Cupcakes

These Neapolitian Cupcakes are really yummy!!!

Yes, they are, soft & fluffy, with the mixture of milk & chocolate taste!

Nic loves them very much, but as usual, she does not take too much of the cream.

The recipe had called for cream cheese frosting, while I used whipped cream instead as my girls are not in favor of cream cheese. The whipped cream frosting tasted as great as usual :-p
Nat had to take a picture with these cupcakes as she said they looked so pretty... Prehaps because of the pink & white cream frosting? She said those biscutis sticks look like straws...:-D

Ingredients:

140g self raising flour

1/2 tsp baking powder

140g unsalted butter, softened

140g castor sugar

2 eggs, lightly beaten

1 tsp vanilla essence

1 tbsp milk (I used UHT milk)

1 tbsp cocoa powder mixed to a paste with 1 1/2 tbsp of water


Method:

Cream butter & sugar till smooth & creamy. Gradually add in the eggs, mix well.

Add in the flour bit by bit, mix until well combined.

Divide the batter into 2 portions. 1 portion mixed with the vanilla essence& milk, while the other to be mixed with the cocoa paste.

Place alternate teaspoonfuls of each mixture into the paper cups., filled about 2/3 full.

Bake in a preheated oven of 180 degC about for 15-20 mins or until firm to touch.


For cream frosting, I used whipped cream, 1 portion vanilla(normal whipped cream) and the other portion mixed with strawberry paste.
