Mocha Butterfly Cupcakes

These Mocha Butterfly Cupcakes are so adorable, plus they are yummy!!!! Hehehe...

The girls liked them very much, and they can't wait to try these cupcakes while I was decorating the cupcakes with the cream and the "wings". End up I had to give them 1 cupcake to share to ease their anxiousness:-p


MOCHA BUTTERFLY CUPCAKES
Well, the girls did love the cupcakes...! Perhaps it looks like a butterfly and the cupcakes look very pretty. After they had the cupcake, they kept pestering me again for more, but I have yet to finish the rest of the cupcakes and the photo-takings. Well, the girls did not really taste the coffee:-p, otherwise they might not like the taste of the beautiful cupcakes... hehehehe....


Ingredients for the cupcakes:


100g butter


100g soft light brown sugar (I use Golden Caster Sugar)


2 eggs


1 1/2 tsp coffee powder/granules


1 tsp warm water


75g self raising flour


25g cocoa powder


Ingredients for the vanilla buttercream:


40g butter, 1 tsp vanilla essence, 75g icing sugar


Cream the butter until smooth. Gradualy add in the icing sugar, followed by the vanilla essence. Chill in the fridge before using.


Method for the cupcakes:


Cream the butter & sugar till creamy & smooth. Add 1 egg at a time and mix well. Pour in the coffee paste(coffee podwer mix w warm water).


Add in the flour & cocoa powder in few batches. Mix until well combined.


Bake the cupcakes in a preheated oven of 180 degC for about 15 mins or until the top is firm.


Remove from oven and cool for about 5mins.


Cut a circle on the top of each cupcake. Cut the circle into half.


Spread some buttercream onto each cupcake and place the slices onto of the cream to make it look like wings.


Decorate as desired and dust with icing sugar.
