Strawberry Swirl Loaf

Couple of weeks back, I saw from Vivian's Blog, she did a strawberry swirl loaf. Her loaf was really soft & fluffy, and the swirl was beautiful as well.

Well, I thought, let me try baking this loaf. The last time I tried doing a Chocolate Marble loaf, the results wasn't that fantastic. So I gathered, after all, I wasn't much of a bread-maker...hahaha....

Well, this time I was actually quite pleased with the result though.

The texture of the bread was really soft as what Vivian had mentioned.

A good try indeed. The only cons was that, I did not really like the taste & smell of the strawberry though... Even hubby and Nic didn't like it as well... :-p So end up my helper finished the whole loaf... She said it was nice & soft.... hahaha, at least it wasn't wasted...
Recipe adapted from ViVian Pang's Blog:


Ingredients:

(A)

200g bread flour

20g sugar

¼ tsp salt

3g yeast (½ tsp + ¼ tsp)

35g whole egg100g milk

(B)

15g margarine/ butter
2 tsp strawberry paste (I use 1 tsp)



Methods:
1. Put all the ingredients (A) inside kneading bowl. Knead to form dough.
2. Add in margarine and knead to form smooth and elastic dough. Weight 150g dough out. Add in strawberry paste and knead till well combine. This will be the strawberry portion. Cover both dough and rest for 1 hour 30 minutes.
3. Transfer both dough to working surface. Slightly knead to remove air bubble. Shape into balls and rest 10 minutes.
4. Flatten the strawberry dough into rectangle. Same with the plain dough(slightly longer). Then, stack the strawberry dough on top and roll up like swiss roll.
5. Place the dough inside a greased sandwich tin and rest for 45 minutes.
6. Bake in preheated oven 180C for 28-30 minutes. Once cooked, immediately remove from mould and leave to cool on wire rack.

古典巧克力蛋糕 Simple Chocolate Cake

I am not sure how to translate this "古典巧克力蛋糕" in English. But it is for sure a chocolate cake.... hahahaha!!!!

I had baked this chocolate cake 2 weeks ago but I didn't have time to post it up as I was rather busy, plus I wasn't feeling too well then.

I got this recipe from 孟老师的下午茶book. So far the recipes I had tried, I like them very much. A recipe book you can consider to buy:-D

My girlfriend came to my house in time when the cake was ready. She tried a slice and she said it was very good! But I found it abit bitter though. And surprisingly, the kids love them very much... They finished almost all the cake the very next day...

The texture of the cake was smooth and spongey.


Here is the recipe:

(A)

40g egg yolk

30g sugar

80g chocolate

70g unsalted butter

20g cocoa powder

2tsp milk

(B)

60g egg white

55g sugar

40g cake flour

1/8tsp baking powder


Method:

1. Mix egg yolk & sugar until well blended.

2. Melt the chocolate over a pot of simmering water. Remove from water. Add in the butter, cocoa powder and milk and mix them well.

3. Pour in the egg yolk batter into the chocolate batter, mix untill well combined.

4. Beat the egg white in a clean bowl. Gradually add in the sugar until stiff peaks.

5. Take 1/3 of the egg white meringue and mix into the chocolate batter. Mix well. Add in the flour and the baking powder. Mix well. Add in the balance egg meringue and mix until well combined.

6. Pour batter in a 6" cake tin and bake in a preheated oven of 180C-200C for about 50 mins or until the top is firm.

7. Decorate as desired:-D

Christmas Delights Dec 2011

Hello everyone, it has been quite a while since my last posting... I guess everyone of us is busy preparing for Christmas, and spending time with your family and your friends.

Gingi Cookies

I actually wanted to bake these cookies for my colleagues as Christmas Gifts.... But I fell sick, so end up I only put some icing on some of the cookies for photography. And the rest of the cookies were left "naked"...

These cookies consists of dessicated coconut. My colleagues tried them and they say the cookies were very good.

This is a Raspberry Log Cake I made for my friend. I didn't know what I should give her for a Christmas Gift, so I thought, a self-made Log Cake will be perhaps a best gift for her.

Mini Chocolate Chips Scones

How would you like to have a mini chocolate chips scones?

I must say, these scones are yummy...!!!


Recipe is actually a plain scone, but I thought I should add some chocolate chips in them, so that my girls will eat them. hehehe...


MINI CHOCOLATE CHIPS SCONES


Well, the usual size scones might be a little too big for my girls. So these mini ones are jus nice for them, and for us, just popped it inside our mouth.. :-p
As usual, I can't wait to try these scones, so I took one of from the oven when it was almost baked... Wah..... I must say it is good...
For those of you whom like plain ones, it will go very well with jam & butter:)

Hubby and Nic tried the minis, and they liked them as well. Hubby said it will taste even better if there were more chocolate chips... hahahaha....

For scones lover, hope you will like this recipe.


Ingredient:

(Receipe adapted from 孟老师的下午茶)

150g plain flour

1tsp baking powder

20g sugar

1/2tsp salt

40g unsalted butter

1 egg

20g milk


Method:

1. Add sieved flour, baking powder, sugar and salt into a large mixing bowl.

2. Add the cube butter into the dry ingredients.

3. Create a well in the dry ingredients, add in the beaten egg mixed with milk. Use a fork to mix the dry ingredients, butter, egg & milk. Mix well.

4. Using your hands, mix the ingredients to form a dough. Chill the dough for about 30mins.

5. Roll the dough flat, about 1.5cm thick. Rest them for about 10mins.

6. Brush the dough with egg wash and bake in a preheated oven of 180C for about 25 mins.

Jammy Cookies

Don't these cookies remind you of your childhood days?

These Jammy Cookies are so tempting....

I must say, I did have a hard time piping these rossettes, till my hand was aching.... hehehe...

Well, I did managed to pipe till the last bits. And how did I fare?

I couldn't help it but I just had to try one of the cookies.

Woooo, I must say it is yummy!!!!

Hubby tried one. He said it is good and I should make these cookies for CNY.

These cookies are rather easy to make. Hope you have fun making these jammy cookies.


Ingredients:

(Recipe adapted from 孟老师的下午茶)

80g unsalted butter

50g almond powder

50g castor sugar

1/4tsp salt

25g egg white

100 plain flour

assorted jam as desired


Method:

1. Beat butter, sugar, salt and almond powder until well combined. Add in egg white and continue beating till well blended.

2. Fold in the sieved flour. Mix well until well combined.

3. Pipe dough into desired rosettes shapes.

4. Bake in a preheated oven of 180C for about 15mins. Remove from oven and top the centre with the jam. Bake for another 10mins and it's done:)

Oatmeal Chocolate Chips Cookies

These cookies are really delicious. Probably meant to be a little chewy feeling but I bake it slightly longer as we all preferred "crispy" crunchy cookies:-D



OATMEAL CHOCOLATE CHIPS COOKIES


Nic took a bite on a cookie and she said she didn't like it as she couldn't bite off the cookie.

Reason being, her front 2 teeth are dropping soon.... hahahaha....

But....., the next day when I came back home, the cookies were almost finished by her.

She said she loves these cookies very much:-D

Recipe did called for raisins and walnuts. But my girls don't really like these 2 items, so I had omitted them off from the recipe:)

Ingredients:

90g unsalted butter

100g brown sugar

1 egg

75g plain flour

100g oatmeal

1/2 tsp baking soda

1/4 tsp salt

50g chocolate chips


Method:

1. Sift flour, baking soda and salt together. Add in oatmeal and stir well.

2. Beat brown sugar & butter until creamy. Add in egg and beat again.

3. Add in the dry ingredients, followed by chocolate chips & stir well.

4. Scoop out abt a teaspoon of dough. Drop in on the tray lined with baking paper.

5. Bake in a preheated oven at 190C for about 15 mins. Leave to cool in a rack.

A Family Trip to Universal Studio Singapore

What have we been up to recently....???

I haven't been blogging for about 2 weeks+. I have been busy furniture shopping for my girl's room, clearng up the unneccessary items... Hmmm, perhaps a pre-cny spring cleaning in advance??? :-D


Last Thursday, we brought the kids to the Universal Studio. We haven't been there since its opening in Singapore. I have been to other Universal Studios in Brisbane & Los Angelas. Sinagpore one was rather disappointing though:-(


Well, but I guess for the kids, it is another theme park.:-p




The Waterworld Show.... MiMi was scared because of the loud noises & explosions... Hahaha..

I did not really enjoyed it as it was sorching hot... End up I went to a bakery restuarant and had a nice waffle with ice-cream and apple juice.... :-D

Almond Cookies

I love this Almond Cookies very much....

I remembered I used to buy many tins of almond cookies as I love these Almond Cookies very much. Even my hubby loves these cookies as well.:-D

These almond cookies are bite-sized.... It did not smell that fantastic when I was preparing the dough.
But when they were out of the oven, you can smell the almond aroma... ahhhhh, that's what I wanted... I really can't wait for the cookies to cool down.... And I just had to try one first....

Really goooooooody!!!! It is really fantastic!!!

I love these cookies sooooooo much!

Almond Butter Cupcake

How about having a Almond Butter Cake in a Cup?

These Almond Butter Cupcakes are really very easy to make.



They are even great as a loaf of cake...

The butter is really soft, taste yummy too. My girlfriend's baby likes it very much. But I feel it is a little bit too oily. :-p


Other than that, the texture was great!!

What have I been up to this Weekend???

Ta-da... This is what I had been up to last weekend... For a change, I decided to make Ngoh Hiang on Saturday. You might probably find this dish a weird one in my blog as I hardly cook.... hahahaha!!!




FRIED NGOH HIANG




I had been wanting to make Ngoh Hiang for a very long time. I remembered the last time I wanted to make, I bought the "skin", but the "skin" ended up wrinkled up in the fridge as I had left it there for a sper long time... Until last Friday, I was chatiing with my friend and she told me she made "mei cai kou rou". So then we talked about the ngoh hiang, that when I decided to try it out... hehehehe!!!
I bought 1/2 kg of lean minced meat and 1kg of prawns from the wet market. I haven't had enuogh money so I only bought 1/2kg of meat:-p. As you can see from the cut ngoh hiang, you can see more prawns in it...

With the 1/2kg of meat and about 3/4kg of the prawns, mixed with minced chestnuts, spring onions, I made about 8 big rolls & 2 mini rolls.

The Ngoh Hiang are ready... I fried the mini ones, and I had to try one, so one of the mini was eatedn by me... Hubby came out of the room, and said the smell of ngoh hiang made him drooled... So he ate 1 big roll and the other mini roll...:-D


It was really delicious..... But it will be better to use the normal minced meat instead of the lean minced meat as the lean meat is slightly drier... With a little fats, it will make the ngoh hiang even more juicy:))



Oh, of course, our dessert.... Mango Pudding....


Eeeermm, I did not made this though... It was a premix mango pudding I bought from Phoon Huat... hehehehe....


Yummy too, additional fresh mangoes added..!!!
